service smtp stop
or
svc -d /service/send /service/smtp /service/smtp2
will shut it down, and yes, you can use qmail-remove.

Thank you!
qmail-remove -r is taking forever! there was 650k emails in queue and only 40k removed in the last hour and half of running remove. Does it take that long? Or is there a better way?
Thanks!
